I think it just means you can play around with the focal point while using a crappy camera, right? So you can have stuff in focus and other stuff blurred, but while using a camera which has an unchangeable depth of field?

So... she was close to you, but the method makes it look like she was far away?

Sort of. She wasn't that close (maybe about 15 or so metres).

Sort of. It's not so much using a crappy camera to imitate an expensive one, it's more using any camera, good or bad, to imitate a very expensive one (medium format).

In very crude terms, from crappiest to most expensive (and also physical sensor size) you have:

Entry level DSLR (£500 - £1000) < Full Frame DSLR (£1500 - £4000) < Medium Format (£15,000 upwards)

Medium format cameras have a certain look to them, since their sensor is so large (not as in megapixels, as in actual physical size). The bigger the sensor, the shallower depth of field you can get. Obviously, you can't make your cameras sensor physically bigger, so you can cheat.

If you zoom whilst taking a photo, the depth of field becomes shallower. So instead of taking one photo, you can take multiple ones (in this case 30 or so) at full zoom, then stitching them together to give a much shallower depth of field than you could normally achieve with your camera in a single photo. If you use a full frame DSRL, you can mimic the look of medium format.

Basically, the whole thing is about getting a shallower depth of field than your camera can normally take, therefore imitating a medium format camera, which most professionals can't even afford.
