Legends includes forty of the best levels from Origins, so maybe you could just play Legends instead. :p I'm actually slightly annoyed that there are trophies for playing the Origins levels. I already spent so much time playing those.

It's not like there are many similarities between the first Jak and Daxter and Jak 2/3 so it's hardly surprising that someone might like the first game and think the sequels are abominations.

It's considered one of the weaker games in the series, if that's what you're asking. You won't be lost in the story, since they're all mostly standalone (well, you'll be lost when it comes to the present-day stuff, but everyone is at this point). It's a fun game and it's worth playing.

You've missed one good game and two bad ones. You should play the first one, love it, then skip the sequels to avoid soiling your impression of Naughty Dog as a company that can do no wrong. Unless Uncharted 3 already did that. Hey, I liked Uncharted 3!
