red onion, peas, and a small potato, oh and some cheese on top.

 

cut the potato into 4 pieces, stuck it in the microwave for 4 minutes, and it was cooked enough to not fall apart in the omelette cooking process.

 

It would be lovely with some kind of ham or maybe chicken in it, but I was at my calorie limit that day and wanted cheese over the meat lol =P

image is a bit dark but I made this t'other night. Roast chicken and mushroom pasta with pine nuts, rocket and pesto. Boom! Doddle to make too but you'll need 45-mins to an hour prep time as the chicken needs to be seasoned, wrapped in foil and roasted for 45 mins. Means you can get everything else ready without much fuss though.

Creamy Sweet Potato & Onion Soup (serves 3)

  1. Roast 1 large cubed sweet potato (OR small sweet potato + 1 carrot) with 4 garlic cloves, salt, and oil for 20mins at 200'C. (with thyme?)
  2. Sauté diced small red and small yellow onion until soft-ish
  3. Add garlic (chop roughly), 1.25 tsp cumin seeds: toast, then grind/chop - 1 min
  4. Add sweet potato - 5 min
  5. Add enough vegetable stock to cover, bring to boil, simmer for 20 mins
  6. Blend, return to heat (do not boil)
  7. Add white pepper to taste
  8. Garnish etc.

Pancakes with blueberry compote and greek yoghurt. I love making pancakes, there's something really satisfying about making a perfect looking stack of them.

Made myself a char sui loin and then combined it with a 'whatever-the-F-was-in-the-fridge' Singapore fried rice. Also boiled down the marinade into a sauce and poured it over. Shalom.

That looks absolutely 'Nom!' @nightwolf :D I haven't had peanut butter chicken in like... forever but that stuff is godly. : peace:

Trying out some new recipes over the Easter holidays, courtesy of Good Food magazine.

 

Tried a spanish omelette or 'frittata' tonight. It was topped with tomatoes, goats cheese, pesto and rocket:

The fritatta was so tasty, we almost forgot to take a photo

Will be trying it out with various different ingredients in the future.

 

So far I've also made a chorizo soup and baked macaroni with meatballs :).

Spanish omelette is soooooo nice! I love having/making tortilla too, mmm.

 

We also had a Spanish meal tonight! I was kinda in the mood for Spanish as my mum has left for Spain today (lucky her). So for the first time ever, we made a paella with chicken and vegetables. And it turned out pretty awesome! =D

How do you do it Happenstance? Did you follow an online recipe?

 

P.S., this thread is going to get fucking smashed up in two weeks. As I will be cooking some mad shit on occasion.
