All they would need to do is adapt the Vitality sensor, no need for Wii2 for that to happen. Thus, the birth of Fruit Freshness Training franchise.

I doubt that, I think they're more taking a similar stance like they did with the Playstation 2. New PS2 games are being released up until 2010 (10 years since its release), despite the fact the PS3 came out in 2006. "Supported" doesn't necessarily mean that we wont see a new Sony console until then, and in my opinion, within 18 months of Microsoft or Nintendo announcing their new console, we'll hear something from Sony too.
